roasted beet salad with
oranges and creamy goat cheese dressing
ROASTED BEET SALAD
WITH ORANGES + CREAMY GOAT CHEESE DRESSING
1 pound small
golden and red beets, scrubbed
2 tablespoons
olive oil, plus more for drizzling
Kosher salt and
black pepper
¾ cup plus 2
tablespoons orange juice
1 teaspoon
sugar
4 ounces goat
cheese, room temperature
2 tablespoons
white wine vinegar
1 tablespoon
heavy cream
2 medium
oranges
8 ounces baby
arugula
½ medium red
onion, thinly sliced
¼ cup
pistachios, chopped
Preheat the oven to 400 degrees F.
Trim the beets and place on a sheet of aluminum foil. Drizzle
with olive oil and sprinkle with salt and pepper. Wrap the beets in the foil
and bake until tender, about 45 minutes. When cool enough to handle, peel the
beets, slice in half lengthwise, and then slice into 1/4-inch-thick half-moons.
For the dressing, heat 3/4 cup of the orange juice and the sugar
in a small saucepan over medium-high heat. Simmer until the mixture is reduced
to about 3 tablespoons, about 30 minutes. Cool completely.
Whisk the orange juice reduction with the olive oil, the
remaining 2 tablespoons orange juice, the goat cheese, vinegar, heavy cream and
1 tablespoon water in a medium bowl. Sprinkle with salt and pepper.

When the summertime heat peaks, my go-to
option for dinner is usually a yummy salad. We have no air conditioning,
believe it or not, so it’s usually not a good idea to turn on the oven or stove
late in the afternoon.
This salad is a tasty and healthy option
for dinner, and if needed I can also throw in some shredded rotisserie chicken that I toss in a little bit of the dressing.
I make sure to roast the beets early
in the morning, or I just thinly slice them and leave them raw, which is so
tasty! And I like to make the dressing ahead of time and store it in the fridge.
This recipe was found at Studio McGee,
one of my favorite blogs and source for inspiration.

McGee & Co. in Costa Mesa |
McGee & Co. is the retail end of
Studio McGee and the best part for me is that the husband and wife team of Shea
& Syd McGee have their one and only brick and mortar shop right here in
downtown Costa Mesa, just down the street from me!

It’s a very small store, but packed
with lots of cute accessories that are perfect for updating any home. Their
selection is also great for gift giving. A birthday gift for a special friend
or a house warming gift can easily be found here.
I stop in often for inspiration and to
pick up a few new things for the house. They do have a great selection of cute door mats and pillows, as well as baskets, candles and frames.
Just before my photo shoot with Cottages & Bungalows magazine, I found this cute pennant there.
