pioneer woman's watermelon salsa recipe





Nothing’s better on a hot summer's day than the cool refreshing taste of watermelon!  So why not spice things up a bit with this super yummy recipe for Watermelon Salsa?

The original recipe comes from Ree Drummond, everyone’s favorite Pioneer Woman. In addition to fresh watermelon, we add a variety of peppers, jalapeno, cilantro and red onion, and what makes it really tasty is the final addition of one of Ree's special spice blends. 





I served it to my family as an afternoon snack with authentic tortilla chips. My favorite brand of chips is “Gracias a Dios”, and they're available at most grocery stores here in southern California. 

 

I actually omitted the green peppers and added just a tad more jalapeno when I made this recipe. I love red, orange and yellow bell peppers, but the green ones, not so much.

Watermelon Salsa 


Getting creative with new summer recipes can be challenging. However, The Pioneer Woman has created a watermelon salsa that adds some refreshing options to your summer entertaining repertoire! By sprinkling a new Pioneer Woman Spice into the mix, this salsa will be a fan favorite! 


Ingredients: 


1/2  Small Seedless Watermelon, Diced 

1/2  Red Onion, Diced 

1  Red Bell Pepper, Seeded & Diced 

1  Green Bell Pepper, Seeded & Finely Diced 

1  Yellow Bell Pepper, Seeded & Finely Diced 

2  JalapeƱos, Seeded & Finely Diced 

1  Bunch Cilantro leaves, Chopped 

Juice Of 1 To 2 Limes 

1/4 tsp. salt 


Directions: 


Place all the ingredients in a large bowl and toss together. Taste test with a chip and adjust salt levels as needed. 


Serve with your favorite tortilla chips or on top of grilled chicken or fish...or even as a side salad! 

 




To make this recipe, I went ahead a got one of Ree’s special spice mixes called the Pioneer Woman “Tex-Mex” or Cowgirl blend to add to this watermelon mixture. 

 

Her mixes looked  so good while I was shopping, that I also got the “Drummond Ranch” flavor and the “Cowboy” Lemon Pepper flavor, and I have to say, I’m slightly obsessed!! 





The "Lemon Pepper" is really good on grilled or roast chicken and the "Drummond Ranch" blend is so good on burgers and steak. We’ve been grilling a lot this summer, and have been adding these to just about every meal.  

 

They’re available on Amazon or at Walmart, if you’re interested. I’m thinking I need to try some of her other spice blend flavors too.  





The watermelon salsa went so fast, that I’m making it again tomorrow. This is a great recipe for a party, or as a condiment to your Taco Tuesday dinner or the next time you cook your favorite fish for supper.


It truly is the most refreshing thing on a hot summer’s day. Pair it with a margarita, perhaps? SkinnyGirl, of course!
